Citric Acid Preservative - Gallon
The use of a citric acid preservative in syrup is practically a necessity. When paired with sodium benzoate, it creates a highly effective preservative that can add about six months to the shelf life of concentrate mixes. Neither preservative will work without the other. A 1-gallon jug of citric acid will preserve 512 gallons of simple syrup. Each gallon contains 128 ounces. This citric acid isnít recommended for anything but shaved ice concentrates.
Unpreserved simple syrup will have a shelf life from 5 to 14 days. To increase the shelf life of your syrup simply add 1 ounce of Sodium Benzoate and 1/4 ounce of Citric Acid to each gallon of syrup that you make. Adding the correct amounts of sodium benzoate and citric acid to your syrup can extend the shelf life for around six months. Please note that neither preservative will work without the addition of the other one.
Please note that our citric acid is developed for our shaved ice recipes only. It is not recommended for use in other recipes such as jams, jellies, vegetable canning, margaritas etc. For use in recipes other than shaved ice syrups, please contact a food scientist in your area.
